I had a wonderful dining experience at Kevin and Amy Binkley’s newest restaurant, Bink’s Scottdale. We stopped by during happy hour, which is 2:30 to 6:00 every day! Chef Kevin Binkley has been called a “food pioneer” and has been nominated for the James Beard Award Best Chef of the Southwest every year since 2005. He supports local farmers and only uses vegetables that are in season.
Kevin visited our table and told us about and the philosophy of his cooking. We tasted Sweetbread Nuggets with sweet and sour sauce, peanuts, and scallions; a Shrimp Roll with pickled celery and remoulade; the Little Gem Salad with dried tomato, cucumber, charred red onion, and buttermilk vinaigrette; and to top it off, the Bacon Burger with sharp cheddar cheese, spicy pickles, and caramelized onion mayo on an onion roll. Yummy!
They also have some amazing cocktails, courtesy of mixologist Joby Taren. All of their juices are squeezed fresh daily. Bink’s is open every day for lunch, dinner, happy hour, and Sunday Brunch. You’ll find it in the Shops at Hilton Village. Enjoy!
