Chef Wiley likes to let ingredients speak for themselves; he calls it the “lost art of un-embellishment”. The art of simplicity can also be applied to wine. Mark Lyon, the winemaker for both Sebastiani and Chalk Hill Sonoma Coast Wines, will be joining us for A Taste of Sonoma County on March 10. He and his father bought a 122-acre vineyard in Alexander Valley back in 1980, and Mark’s hands-on management of the vineyard has allowed him to develop a tremendous knowledge of wine, particularly Bordeaux varietals. We hope you’ll join us as we explore the wines of Sonoma County, one of America’s great wine growing regions, paired with a seasonal four-course menu.
