Last week I went to the newly renovated T.Cook’s restaurant and The Mix Up at the Royal Palms Resort & Spa. The romantic ambience of the dining room and courtyard are perfect for the Mediterranean-inspired cuisine, and the views of Camelback Mountain from the patios are stunning.
Executive Chef Paul McCabe blends local and regional flavors to create Mediterranean cuisine that is thoughtful and bold. I enjoyed sampling the Roasted Beet Salad and the Scallops with short rib tortelloni, chanterelles, peach, and sea beans. While you’re at the resort, be sure to stop by The Mix Up, which features garden-to-glass cocktails from master mixologist Kim Haasarud!
